Green Bean Casserole

Here's Patch's favorite iteration of this classic holiday recipe, green bean casserole. Ingredients:

2 pounds green beans, trimmed

2 tablespoons butter

1 bunch scallions, white and green parts thinly sliced separately

Salt and pepper

3 tablespoons flour

1 cup chicken broth

1 cup heavy cream

1/2 cup crushed potato chips or French's French fried onions

Season with salt and pepper, sprinkle with the scallion greens and remove from the heat.

Homemade Green Bean Casserole (Dairy Free)

Thanksgiving Green Beans

20 ounces crimini mushrooms, half thinly sliced, half minced
2 cloves garlic, minced

salt, pepper, to taste
pinch nutmeg, optional
2-3 Tbl. flour
1/4 cup sherry
3/4 – 1 cup soy milk or other non-dairy “milk” or broth or even seasoned water

Saute the mushrooms in the frying pan, adding more oil as needed (another 2 Tbl. oil). Cook down the liquid. Mix the green beans with the mushroom sauce in a heatproof serving dish. Top with the crispy shallots. Reheat when needed. Long oven cooking fuses together the flavors and make the green beans meltingly soft.
